Menus and Packaging
I felt the menus (seen below) created for the 2001 DVD made the film seem like more like a horror/slasher movie. Luckily the new menus (seen below) created for 2007 are much more suitable providing clips with soundbites and music from the film.
The extras on Disc Two are organized much better with a section for documentaries, deleted scenes, etc. It's just a much better layout which allows for easy access for the viewer.
This new presentation features a booklet containing a scene selection list, and an essay about the film. It's great to see these as most companies these days are trying to phase booklets out. Fox seems to be one of those companies that keeps them. Also included are some recipe cards for some meals like roast lamb etc. Kind of tacky but what the hell. There was also an ad for that new Hannibal Rising movie. (I threw it away.)

Picture Quality
Cap 1:

I noticed that this scene had a lot of dirt and debris on the original special edition but hardly any at all on the new collector's edition. There is a subtle change in colour too, leaning more towards bue than the more red colour of the SE. Framing is pretty much the same with a little more picture info on the CE.
Cap 2:

A subtle change with a slightly brighter and more green SE with deeper blacks and less green image on the CE. Framing has changed minutely with less on the top and more on the bottom for the CE. This framing trend continues for most of the film.
Cap 3:

Slightly more detail in the image of the CE and obvious dirt removal. Framing again has been changed.
Cap 4:

Here we can see there is more density in the new transfer and more detail. Framing is changes can be seen as well.
Cap 5:

There's not really any difference visible in this transfer. This is evidence that only certain scenes in the film had to be corrected. MGM probably realized their previous errors so they went back and fixed them.
Cap 6:

Here the skin tones have become ever so slightly less red and the white shirt is more bright and vivid. There's no real framing change here though.
Cap 7:

Far less grain evident in the sky. Also a more white sky with less yellow.
Cap 8:

Framing change with slightly less grain and a little more white in the image.
Issues Corrected
For those of you in R2, the titles that were missing on the R2 version are here for both the original and new Special Edition.
